There’s no doubt that Wyoming’s rugged roots and range-style fare are quintessential to its dining scene. From fresh game and day-caught trout to local, ranch-raised beef, we know all the best cuts and how to serve them up right . Although that’s not to say we don’t know how to explore the creative side of Western cuisine either! While every corner of the state has unique offerings that dive into the bevy of carnivorous delights that our region is known for, one phenomenal restaurant smack in Jackson’s city center offers an extra helping of variety when it comes to unexpected meats. At Local, you’ll start with a savory taste of Wyoming’s ranch-to-table cuisine , followed by a smorgasbord of wild and unique eats that have earned this local gem quite a unique reputation. The next time you’re in Jackson, check out Local Restaurant and Bar for a delightful taste of Wyoming.
Local may not be quite as grandfathered in as some of the other restaurants dotting the Town Square in Jackson Hole (it opened in 2012), but its name and prime spot next to the iconic Million Dollar Cowboy Bar hint at the incredible dishes that await inside.
For many diners, a visit to Local starts and ends with an award-winning steak, supremely tender and hand-cut from beautiful grass-fed, locally-ranched Wyoming beef.
You can't go wrong with the classics, after all.
But for those looking to fully immerse themselves in Wyoming's "wild side," there's so much more to love here than the perfectly-grilled ribeyes and filet mignon.
It all starts with Chefs Will, Kyle, and Jesse and their carefully crafted seasonal menu, where every dish truly lives up to its name. Unexpected combinations shine here, each unique ingredient bursting with color, flavor, and freshness.
Wyoming classics like the Local Beef Chili (made with house-ground beef) take on new life with the addition of chipotle lime sour cream and aged Cabot cheddar, while familiar favorites like the all-American Philly Cheesesteak are given fresh New American appeal thanks to shaved Wagyu, mushroom banana peppers, and chopped jalapenos.
For diners who are new to Wyoming's meat-centric culture and aren't sure where to start, the fully-customized and artfully-plated charcuterie and M&M options are an incredible entry point into a diverse world of Cowboy State cuisine that goes beyond chicken and burgers.
Game sausage, beef tongue, smoked trout, duck, and more are just a few of the tempting meat options, nestled in luscious beds of the finest local cheeses. Meanwhile, M&M boards are essentially charcuterie for meatlovers.
But don't think for a moment that even the greens aren't chock full of diverse protein options! Crispy Duck or Crab Cake Salad, anyone?
If you're ready to dive right in, Local is uniquely home to some unbelievable local bison options, including Buffalo Wellington, Buffalo Tartare, Buffalo burgers, and even tantalizing Buffalo Medallions, which feature coffee-rubbed tenderloin, sweet potato purée, and huckleberry demi-glace.
Although the locally-sourced "Flintstone" rib is a massive, family-style portion that definitely shouldn't be missed.
House-smoked and delicately soy glazed with a kimchi slaw, sweet chile sauce, and spicy mustard, it's a boldly sweet taste of Wyoming's ranch fare.
Blackened trout, house-made game sausage, braised rabbit, house-cured pork belly, pheasant, and even fresh lobster add color and mouth-watering diversity to the ever-changing menu.
If you'd like to go a little lighter with your meal, the Short Rib Pasta is out-of-this-world good and overflowing with braised Lockhart beef, fresh veggies, and all the fixings.
Whatever creations are on Local's latest menu, you're sure to find something for your tastebuds to fall in love with.
Or, tempt your tastebuds with some Crispy Pork Shank with chipotle-coriander creamed corn and salsa roja, Butternut Squash Risotto with roasted butternut squash, balsamic roasted cippolini onions, toasted hazelnuts, and parmiginao reggiano, or perfectly-seasoned French Onion Soup.
Each unique local protein can be found accompanied by tangy microgreens, lemon arugula vinaigrette, house-made pasta, and a multitude of other incredible sides, dips, and sauces that take advantage of seasonal offerings.
With so much care and farm-to-table flavor going into every dish, it's no wonder that Local is consistently recognized in national publications for its freshness and creativity. Not to mention loved by Wyomingites and JH visitors alike!
It's a carnivore's dream come true, that's for sure!
