Wyoming is home to all sorts of restaurants, cafes and diners, but i can be hard to find some truly authentic Mexican food way out here in the middle of nowhere. We love our isolated small towns, and occasionally they’re hiding a real treat. Lyman is one of these towns that’s got a secret – in this spot an hour north of the Utah border, you’ll find some of the best Mexican food in Wyoming.
Lyman, Wyoming is a town in Uinta County, and though it's home to just 2,000 people, you'll find one of Wyoming's most delicious restaurants hiding here.
The tacos are mouthwatering - particularly the fish tacos, shown below. Load them up with fried rice and refried beans and you'll feel like you're on central American vacation.
Whether you're craving a smothered burrito, homemade guacamole, or fresh tacos that will whisk you away for paradise, Fiesta Guadalajara is the place to go for the best Mexican food in Wyoming.
Fiesta Guadalajara is open Monday through Wednesday, 11 a.m. to 9 p.m. On Thursday, Friday and Saturday, the hours are 11 a.m. to 10 p.m. On Sunday, this family owned shop is closed for the day.
