Palmyra is a small town along the Scuppernong River. It’s about 30 miles west of Milwaukee and 50 miles east of Madison. The name means “sandy soil,” and it’s a perfect spot for the largest trout farm in Wisconsin. Grown in natural spring water ponds, Rushing Waters has been using sustainable practices since 1999 to grow all-natural, chemical-free Rainbow Trout. It’s an awesome spot near two of our state’s biggest cities. They added a restaurant offers stunning views of its forest locale, but the very best thing about the restaurant is that now you can catch a trout and have it for lunch just a short while later.
Rushing Waters is a unique and wonderful dining experience located within the Kettle Moraine State Forest. Sure, you can just head here for the restaurant and enjoy the beautiful fish prepared by their great kitchen. But wouldn't it be awesome to go catch your own meal and have it cooked up fresh?

This is no dinky fishing area. Rushing Waters has an 80-acre farm with crystal clear ponds and raceways full of rainbow trout.
You can fish at Rushing Waters year-round. The ponds are kept at 49 degrees, which ensures a long, slow, gradual growing cycle to create delicious and amazingly tasty fish. There is no entrance fee for Rushing Waters and no fishing license required. There is no catch and release, but you only pay for the fish you catch.
They make it as easy as possible. Your Rainbow Tour costs $8.75/lb. in live catch weight. That cost is all inclusive of poles and equipment, bait, cleaning and icing your fish, if necessary.
From 11:00 am – 2:30 pm Wednesday – Sunday, for just $11 above the price of your catch, you can enjoy a shore lunch that includes your rainbow trout filleted and pan-seared served with homemade potato pancakes & apple sauce, spring vegetables and rye bread.
