The story of Farmer Johns’ Cheese vegan on a typical Wisconsin dairy farm. The fourth-generation farm milked about 200 cows and sold the milk at the going market rate. Profit or loss depended on the given milk prices, and prices could change at any time.
Then the farm did something a little unusual and a bit remarkable. It sought greater success by reducing the herd – it sold off most of the cows, keeping just 30 animals. It then started making cheese with the milk it still produced.
