The eatery was opened by the Kanczugowski family (Kamila and Mirek). The name Sebi’s comes from the nickname of the owner's oldest son, Sebastian.
These days, the eatery is run by the younger son, Daniel, with Kamila as the head chef.

Kamila Kanczugowski is originally from Poland, which is where she started her culinary training.
Chef Kamilia's experience is pretty impressive -- she trained in both Poland and Italy before coming to the U.S. and going to culinary school.

After spending a few years operating a deli at the Seattle Center, Kamila opened Sebi's Bistro with her family.
