Despite what some may think, there are plenty of places to enjoy delicious Mexican food here in Washington — you just have to know where to look. And while you might not expect to find tasty tacos and queso inside an old bank building, that’s exactly what the restaurant Copal has to offer. This relatively new Seattle eatery is well worth your time.

It's owned by local restaurateur Matt Dillon, who also owns Sitka & Spruce and the Corson Building in Georgetown.

There's something special about dining in a historic spot, and the fact that the food is fantastic doesn't hurt.

With dishes like barbacoa and poblano tacos, grilled Salvadoran cheese, and freshly made guacamole, you won't leave hungry.

From the rotisserie chicken to the barbacoa beef tacos, everything on the menu is exceptional.

They open at 11:30 Monday - Friday (4 p.m. on Saturday) and close at 10 p.m.
