Washington’s most popular tacos are not sold from a truck or an upscale eatery. And for years, their most local patrons tried to keep them a secret. But now that there are four locations, it’s safe to say the secret is out — and if you’ve never heard of Seattle’s Tacos Chukis, allow us to introduce you.
Tacos Chukis opened in 2011 in Seattle's Capitol Hill neighborhood.
Despite being tucked away on the second floor of a building, people took notice right away.
The idea for Tacos Chukis began in 2010 when the founder and owner, Roberto Salmerón, got a craving for tacos so intense he decided to bike 1,600 miles to Mexico for them.
Salmerón is originally from Tijuana, and he had just graduated from the University of Washington when he decided he needed some Mexican street tacos. When he returned to Seattle, he decided to open his own taqueria.

The street tacos come with your choice of protein, cilantro, onion, and housemade tomatillo guacamole.
