The founders, Fred and Jim Parker, who are also brothers, decided to open a restaurant to honor their grandfather's chili recipe, which was traditional Texas chili originally prepared on a chuck wagon.
The restaurant officially opened its doors in 1980 as an old-fashioned chili parlor, where locals and visitors alike could gather over homemade chili.

By 2005, the restaurant was really put on the map when it was listed among the best 10 restaurants in the country for chili in all of its delicious varieties.
