Owner Whit Hanks chose to name his restaurant after his great-grandmother, Tillie, a passionate Austin leader in the late 1800s. In addition to traveling the world and supporting local art, Tillie Hancock oversaw the development of the Aldridge Place subdivision in Austin and helped build the Hancock Opera House.
