While scores of restaurants showcase a menu item of a whole fish (some even leave the head on), there’s little competition when it comes to serving a whole flounder that leaves a lasting impression and desire for a return trip, quite like the crispy, whole flounder served at Anson Restaurant in Charleston.
Scored with diamonds across the belly of the fish and then coated in a sugary apricot glaze, the crispy whole flounder at Anson is delectable.
Served sans head, the fish usually stretches from one end of the plate to the other and is bite after bite of flaky white flounder cooked to perfection before the glaze is even added.

Little do most people know that when Anson first opened, it had a sister restaurant located about 150 feet away that included the crispy flounder on its Italian-themed menu. Anson, however, did not.
Eventually, Anson just added the dish to its menu, making the whole process much easier. Anson serves Southern fare in stylish digs. You'll find everything on the menu from steak to fish, shrimp and grits, and even a cheeseburger. But trust us: get the whole flounder with the apricot glaze.
