For those who have yet to experience the bubble waffle, allow us to introduce you. A bubble waffle is a Chinese sweet snack made in a special waffle iron, and it’s fantastic. For the last several years, the Kow Kow food truck has been enticing us with delicious bubble waffles topped with ice cream and other toppings all over Providence. Recently, this beloved food truck moved to a storefront location, and we couldn’t be happier.

The Kow Kow food truck first opened in 2018, when owner Vilada Khammahavong, or Vi, decided to take a break from medical school to delve into the bubble waffle business.

Vi loved bubble waffles as a child, so she decided to experiment with pairing them with ice cream.
Needless to say, Vi's efforts were enormously successful, so much so that she decided to open a storefront location.

The storefront location opened in April, immediately drawing huge crowds and long lines.
You'll find this one-of-a-kind dessert shop in Providence’s Fox Point neighborhood -- and when it's open, it's never this empty.

The Kow Kow food truck won a Best of Rhode Island Reader’s Poll award in 2019 for Pop-Up Vendor, so it isn't surprising that the storefront location is so popular.
