Cornbread Cafe is the best spot for brunch in Eugene. It's closed on Mondays and Tuesdays, but it's open the other five days of the week. You're going to want to go there and get a table as soon as you finish reading this.
The vibe of this spot is friendly and welcoming. It's like a perfect hometown diner. Breakfast is served all day, but if your cravings lean toward lunch, there are plenty of lunch options on the menu, too.
But, let's talk about breakfast, shall we? Now, while you look at all these pictures, remember - this is vegan food! Nothing served here is made with animal products of any kind - but it's all super delicious.
Do you like biscuits and gravy? Who doesn't, right? These biscuits are made smothered in a vegetarian gravy and are served with perfect home fries as a side.
Or perhaps you'd like to try this vegan breakfast burrito. It's made with a plant-based egg substitute, seitan sausage, french fries, fresh salsa and cashew-based unCheese sauce, all wrapped in a spinach tortilla. It comes with your choice of side.

You didn't expect to see chicken and waffles on the menu, did you? Well, this is actually chik'n and waffles, which means the "chicken" is not actually chicken - its an excellent substitute. If you're a meat eater, you won't know the difference. If you're a vegan or vegetarian, you'll find this to be some of the best chik'n around!
Here's another one of Cornbread Cafe's specials! It's Cornbread Hot Brown: roasted and smoked tofu piled onto sourdough toast and topped with a cheesy mornay sauce, tempeh bacon and chives. Wow!
