A visit to one of Oregon’s diners is always a great way to start the day, and if you love pancakes, you’ll want to visit Addi’s Diner in Springfield. Not only are these pancakes delicious, but they’re also so large that they fall right off the plate. Bring your appetite!

Yes - pancake. Singular. This place doesn't offer a stack of pancakes. Why? Because one is enough. More than enough, really. It hangs at least five-six inches off the plate.
The "Big Plate" comes with one pancake, two sausage links or strips of bacon, and one egg. If you didn't see the photo, you might think it sounds like a pretty small breakfast.
If you don't want breakfast meat and an egg, just get "The Hotcake." You can get it with just syrup and butter, or get fancier with chocolate chips or blueberries, strawberries and whipped cream.
We should mention that many of the other menu items are delicious, too. Try a huge omelet, a scramble, corned beef hash, and more. The portions are all hearty.
