I write like it's my job - because it is! I have a Master's in English and love words: crossword puzzles, Scrabble games, Wordle, and, of course, good, old-fashioned books.
I'm a writer and editor at OnlyInYourState, and a contributing writer at Cincinnati Magazine. I love the Great Outdoors and am endlessly awestruck by this beautiful country of ours. Coffee keeps me going, yoga keeps me sane, my kids keep me grounded, and my writing keeps me inspired.
There’s nothing that compares to a fresh, made-to-order taco. Or burrito. Or chips and guac. (We’re not picky!) Mexican street food is the ultimate portable, craveable meal, and La Taquiza Vegana makes some of the best in all of Oregon. This humble little food cart is on a mission to expand the boundaries of Mexican cuisine, and judging by their cult-like following, we’d say they’re most definitely succeeding.
La Taquiza Vegana has been dishing up big, bold flavors to hungry Portlanders since 2019.
La Taquiza's dishes have inspiration and deep cultural roots from different geographical areas of Mexico, including Oaxaca, Jalisco and Mexico City, as well as California and the PNW.
They have four distinct tacos: adobo-marinated soy curl al pastor, slow-cooked jackfruit birria, mushroom-tempeh chorizo with potatoes, and grilled cactus and onions with ancho oil.
Oh -- did we not mention the entire menu at La Taquiza Vegana is vegan? It is -- but you'd never know it. This eatery is on a mission to expand the boundaries of Mexican cuisine, and offering a fully vegan menu is their way of affecting positive, plant-based change... one taco at a time!
Keep the Meatless Monday vibes rolling into your Taco Tuesday with a trip to La Taquiza Vegana. This is an innovative, delicious, forward-thinking approach to Mexican cuisine, and we’re here for it! For hours and specials, be sure to follow La Taquiza Vegana on Facebook.
