If you’re looking for one of the best baked potatoes of your life, head to Rubicon Potato in Jenks. Imagine a skinless potato layered with brisket, cheese, and butter then drizzled with a heavenly barbeque sauce. This little “hole-in-the-wall” restaurant is really everything you want in a locally owned business, great food paired with great service.
Rubicon Potato is located in Jenks and is only open for business on Fridays from 1 p.m. to 8 p.m. and Saturdays from 11 a.m. to 6 p.m.
Their menu might have a few items, but we wouldn't call it limited. We would refer to it as focused. The focus here is on doing a few things really well, like potatoes and sandwiches.
Rubicon's smoked baked potatoes are the most popular menu item. You have your choice of meat (smoked brisket, hotlinks, or chicken), and each potato is also covered with butter, cheese, and barbecue sauce, which turns these potatoes into a MEAL.
