Most of us know that New Mexico has an official state flower (the yucca flower), an official state bird (the greater roadrunner), and an official state food (the chile). But did you know there’s an official state cookie of New Mexico? If you didn’t know, you’ll enjoy discovering more about this sweet fun fact! Biscochitos are a traditional cookie here in New Mexico and are often part of major celebrations such as weddings, graduations, and the holidays. And in 1989, they became the state's official cookie.
If you've never had biscochitos before, they are simple sugar cookies with a hint of cinnamon and anise (licorice). And the texture is one that just melts in your mouth. Delicious!
How does a biscochito ice cream sandwich sound to you? A layer of your favorite ice cream between two biscochitos is a nice take on New Mexico's official state cookie.
