Take a moment to think of your favorite things about New Mexico. Were certain foods anywhere at the top of that list? We bet at least one favorite dish was! It’s a sad thought to imagine not having ready access to it but there are quite a few New Mexicans who have this very experience after moving away. Sure, you might be able to find some variation of these dishes in other states but there’s nothing quite like the version you’ll find here in New Mexico.
Nothing says Christmas like this little cookie with its signature anise flavor and a generous helping of lard. One bite and you'll know exactly why this is New Mexico's official cookie.
We think it's impossible to truly enjoy a fresh, piping hot relleno made with (gasp) Anaheim chiles used in other states! Who needs that flavorless thing when you can use a real deal Hatch chile?
Some restaurants in other states have started offering canned green chiles as a topping for their burgers but they don't compare to the originals you'll find here, especially when chile season is in full swing.
New Mexico's name may have become synonymous with green chiles but our red chiles are delicious as well! If you can't decide on how to top your enchiladas, ask for it Christmas style.
Okay, it's a bit difficult to tell from the photo but these enchiladas as served stacked—layered like a lasagna—and topped with a fried egg and plenty of red chile. How else would you eat it?
This is one of my favorites that I haven't seen on a restaurant menu in other Southwestern states...or at least not quite done right. The sopapilla by itself is mouthwatering but add some fillings and top it with chile? That's an unforgettable meal right there!
