This Pancake Parlor In New Hampshire Has Been Serving Up Perfection For More Than 75 Years

Is there anything better than warm pancakes on a cold New Hampshire morning? To be honest, there’s not much better than comforting pancakes any time of year. And, of course, going out to breakfast always feels festive. If you’re a breakfast lover who likes when things feel a little more special, you’re going to love this New Hampshire classic!
Polly's Pancake House is hiding out in the town of Sugar Hill, just next to Franconia.
The land that Polly's sits on was originally a farm owned by Brigham Hildreth in the early 1800s. His son took over the business and had a daughter named Lucy who married a man named Wilfred "Sugar Bill" Dexter who turned maple into one of the key crops on the farm. They remained the farm "Hildex" to combine the two last names. Lucy passed away and Wilfred remarried during the Great Depression. In order to highlight the maple products here, they opened a tea room serving pancakes. And the rest is history!
There are a variety of batters on the menu here, ranging from traditional buttermilk to buckwheat. And there are seemingly endless toppings and add-ins.
