Take a ride on the High Roller observation wheel at night to view the night lights of Vegas. This lovely property was once owned by millionaire Howard Hughes. The main ranch house is open for visits and there are self-guided tours you can take together around the property. There are many picnic tables in shady spots along the lawn with grills that would make for a perfect dining spot. You can also enjoy hiking in the trails in the park which have some exquisite views of the mountains and Las Vegas. There's a $9 entrance fee with a $2 discount for Nevada residents. The park is 15 miles west of the city of Las Vegas on State Route 159 (Blue Diamond Highway).
5. Ride on the Virginia & Truckee Railroad (Carson City)
Take a ride through the past on a restored train on the V&T Railroad. There are three scenic route options in the Carson City, Gold Hill and Virginia City areas, and each route includes narration, amazing scenic vistas and even the chance to view some wild mustangs. Pricing varies so consult their website for tickets for the route of your choice. Even better, try one of their themed rides such as the "dinner & melodrama" train or wine tasting train ride through the Carson Valley. 6. Try a Round of Gold at the Conestoga Golf Club (Mesquite)
The town of Mesquite is known for its incredible array of professional and picturesque golf courses. Even if you're brand new to golf, you can sign up for a lesson at the Conestoga Golf Club and rent your equipment at their pro shop. Instruction is $65 for $45 minutes and club rental is $55 per round. Check with the club for tee time rates as these vary. When you're done with playing, sit down for a meal at the club's 1880 Grille with it's stunning view overlooking the course. To get to the club, take the I-15 North from Las Vegas and take exit 120 (Falcon Ridge/Mesquite Boulevard) and make a left onto Falcon Ridge Parkway until you reach the club entrance on the left.
7. Walk Along the Colorado River (Laughlin)
This lovely walk goes along the stretch of the Colorado River that passes through the town of Laughlin. Enjoy an easy stroll hand-in-hand and take in the views of the mountains and boats and jet skis on the river. You may even see some of the local wildlife, such as otter, raccoons, skunks and many types of water fowl. You'll pass behind many casinos and hotels so there are tons of places to stop and sit and have a coffee or a bite to eat. You can find the Riverwalk all along the casinos but the best spot is to park at the Riverside Casino and walk down to the Riverwalk.
8. Become Cowboys for the Day at Cowboy Trail Rides (Las Vegas)
There are a number of different ride options you can take together, all of which go through various parts of the gorgeous Red Rock Conservation Area. The WOW Ride is better suited for riders with some experience, or newbies with a lot of stamina! They have several shorter options and the Sunset BBQ Ride is a wonderful date option that includes stunning sunset views over Red Rock and a cowboy dinner by the fire complete with s'mores and singing cowboys. Rates vary for each ride so consult their website for more details. Cowboy Trail Rides is at 4053 Fossil Ridge Road.
9. Soar Up Above in Serenity Helicopters (Boulder City)
For a different type of ride, consider a helicopter tour! Situated in Boulder City, Serenity Helicopters will take you on a Sunset tour over Lake Mead, Hoover Dam and the West Rim of the Grand Canyon. At the Grand Canyon you will be treated to a delectable gourmet dinner before returning back to Boulder City. Another option is the Sky Dancer Landing & Picnic, which will take you over Lake Mead, Hoover Dam, The Grand Wash Cliffs, and a champagne picnic lunch at their private landing by the Grand Canyon.
