While Roost is less than a decade old, the business model comes with a long history. Its owners are part of the Darr family, who opened the Chow-Time Restaurant in the 1950s in Tennessee. The family eventually expanded to fried chicken, and the rest is history.

The team at Roost is also committed to whole foods, using natural, hormone-free chicken raised on a family farm. They even order raw peanuts to boil and okra to fry, although they do use local ice cream from the Big Dipper.
