A “bruncherie” is exactly what it sounds like: a high end brunch-focused eatery that tends to focus on unique and creative dishes (which often happen to be so perfectly plated they’ll turn you into a food photographer). Needless to say, while Montana has more than its share of breakfast and brunch spots, it isn’t every day you see something like this in the Treasure State. But now that The Sassy Biscuit Co. is open in Billings, Montanans can enjoy the most important meal of the day in a whole new way.

Owner Jilan Hall-Johnson started making biscuit waffles for her own children, and what she calls a ""silly idea" eventually became a fantastic business idea.

DeMarco’s military experience allowed the couple to try food from all over the country, and his culinary experience has been a huge asset to the business. Jilan has culinary experience herself, as well as a degree in counseling.
