Lanesboro, Minnesota has a lot going for it. The small town is nestled along the banks of the Root River in southern Minnesota’s Bluff Country. It comes complete with popular bike trails, many lovely bed and breakfasts, and its fair share of charming restaurants. Perhaps the most charming is a little diner called Spud Boy Lunch.
