Chef Masa Miyake grew up in the small Japanese region of Aomori and then later in Tokyo before moving to the U.S. to pursue his dream of running restaurants in New York. From New York he came to Maine where he’s been running Pai Men Miyake in Portland since 2009.
The menu boasts 11 different kinds of ramen, each with a unique flavor profile inspired by Chef Miyake's heritage and travels.
A Lobster Miso Ramen on the menu is a fun nod to the historic lobster trade in Maine, while a Tonkotsu-style ramen with pork broth and pork belly provides a more traditional option.
One of the things that makes Pai Men Miyake so unique is that Chef Miyake takes staff on trips to Japan to immerse them in the food and culture. These trips ensure that Miyake's restaurants serve the most authentic cuisine with the most traditional hospitality.
In addition to Pai Men Miyake, Chef Miyake also runs a restaurant in Portland simply dubbed "Miyake," which has more of a sushi focus than its ramen-based counterpart.
At Pai Men there are additional options to ramen. Diners can choose from a select sushi menu and small plates including favorites like gyoza and pork belly buns.
Finish your ramen feast with drink; there's a robust wine, beer, and sake menu at this restaurant. Or opt for a craft cocktail, like the Whisky Hot Pot.
Maine may not be the place your mind instantly jumps to for authentic Japanese cuisine. But in Portland’s thriving and innovative food scene, Pai Men Miyake sets the gold standard for ramen in Maine!
