Not only does Maine's lobster make up nearly 90% of the country's supply, it's also a key area of study at the University of Maine! Since 1987, this department at the school has focused on supporting the state's lobster fisherman and finding sustainable ways for lobster fishing around the world.

While it's certainly a Maine company, it's actually named for Burt Schavitz, a photojournalist from New York City. He moved to Maine after believing his career had been made less important by the increasing popularity of television. After becoming a beekeeper he founded the company with Roxanne Quimby in 1984.

While you might meet people who claim to be confident, there's no real conclusive proof of the names's origin. Some say it's shorthand used by sailors to refer to tell the difference between the state and the islands off the coast. Others say it's named after the French province of the same name.
