In Louisiana, We Don't Have Normal Seasons. This Is What We Have Instead.

As soon as their telltale mud homes start popping out of the ground you know that crawfish are just around the corner. Let the boils begin! Prime time is March-April-May.


If you wanted to, it wouldn't be unreasonable to divide Louisiana into two seasons weather wise: when it's hot enough for a snoball, and when it isn't. Basically, we have hot season, March-September, and then not as hot season from Sept-March. But this ingenious treat is really something special.


If you've never had one of the legendary Louisiana soft shell crabs, you are definitely missing something! Fun fact: These crabs don't always have soft shells, it's because of the time in their life cycle when they are harvested that makes their shells soft.

Louisiana just wouldn't be Louisiana if it wasn't for the shrimp. The boats above were leaving port from Venice, LA, but there are so many boats out at any given time harvesting the incredible bounty throughout the season. And of course, what better way to enjoy them than with grits?


Whether you are a Saints Fan, a LSU diehard, or maybe even LA Tech, Grambling, or ULL fan, football season brings awesome parties and some incredible highs and lows!

And of course, oyster season. While the industry has been through a lot with the various environmental issues over the years, things have basically recovered and of course they are still delicious. The chargrilled version pictured here is absolutely a must-eat!!
