Established in 1980, French artist and restaurateur Jacque Soulas decided to open a restaurant that reminded him of his homeland. Fun fact: the restaurant is named after the 19th century French Impressionist Hilaire Germain Edgar Degas. Degas visited New Orleans in 1872 and lived on Esplanade Avenue for a short time.
