Po’boys may have gotten their start in New Orleans, but these tasty sandwiches are eaten all over the Pelican State. While the origin story gets a bit messy, it’s widely believed that the po’boy was invented around 1929 in New Orleans by brothers Benjamin and Clovis Martin, who offered these specialty sandwiches to streetcar workers during the four-month-long streetcar worker strike in 1929. When the workers would walk in, the brothers would call out, “here comes another poor boy!” and over the years, the sandwich took on the name.
It’s not hard to find a po’boy shop in Louisiana, but when you want one of the best po’boys in Louisiana, you turn to Dempsey’s, where they’re serving some seriously overstuffed po’boys.
