The Kentucky Derby, the best bourbon in the country, amazing barbecue, Derby Pies, and so much more was invented in Kentucky. However, one quintessentially Kentuckian item we can’t forget is Benedictine spread which is most commonly found on our soothing summer cucumber sandwiches! Let’s explore this yummy Kentucky treat and how it came to be.
It’s not a Kentucky summer without a mint julep, a glass of bourbon, a day at the Kentucky Derby, and a serving of something that includes Benedictine spread. Made primarily with sour cream, cucumbers, and spring onions, this concoction is a Kentucky favorite.
Where did this delicious treat come from? It was invented in the early 1900s by a caterer named Jennie Carter Benedict. She released cookbooks and ran a tea room called Benedict’s. Her cookbook, "The Blue Ribbon Cook Book," is still being sold and was most recently re-released in 2008.
It’s such a versatile spread and can be served in so many different ways: top some crackers, put it on toast, make an open-faced sandwich with other veggies, cucumber sandwiches, or as a fine addition to a charcuterie board.
The best thing about it, besides the flavor, is that it’s so easy to make. It’s also quite easy to find. Go into just about any deli or sandwich spot in Kentucky and you’ll very likely find it! Savor it with some sweet tea and you’ll be having a meal that’s as true to Kentucky as Churchill Downs.
