We’ve heard that there’s a meat shortage affecting many communities, and we know Kansas is all about meat. When the store is meatless and there’s not a scrap to be found, you should try out these classic meatless meals for a new twist on many of your favorite styles of good Kansas cooking. There is still plenty of beef broth available to use, and no meat means you can add in more veggies. I love loading mine up with mushrooms and potatoes at the end to give it extra oomph.
