It seems like it's getting harder and harder these days to find an actual cheese factory. Idaho used to be full of them but over the years they've dwindled. However, there are a few remaining and one of them is Manwaring Cheese in the small town of Rigby.

Believe it or not, Jefferson County was one of the largest milk-producing counties in Idaho during the 1970s. It was during this time that cheese factories were a common sight. Just a few cheese producers are left and you'll definitely want to take advantage of them.
The Manwaring family started their family tradition of cheesemaking in England before moving to a small town in Idaho during the 70s. Basil Manwaring had opened his first cheese factory in 1955, relocating it to Rigby when he moved.
The factory ran throughout the late 80s, but eventually closed up shop. Basil's son, Blake, picked it back up again around 2010. The factory opened back up and it's doing better than ever.
Here at Manwaring Cheese, making cheese is a special process that shouldn't be rushed. Using raw, unpasteurized milk from a local dairy, Manwaring pasteurizes it himself and adds a special culture that's been imported from France. This gives the milk a thick texture before turning it into cheese.
Manwaring Cheese is especially known for their cheese curds. There's something special about indulging in a handful of cheese curds that have been freshly made from a local factory. This is truly one of those iconic Idaho experiences that everybody needs to try at some point.
