When an eatery does that, they receive a special designation that demonstrates they meet strict requirements that respect the tradition and art of Neapolitan pizza making.

There are fewer than 100 restaurants in the U.S. who have received certification from the Associazione Pizzaiuoli Napoletani and Fairfield's Brick + Wood is one of them.

Brick + Wood begins with fresh dough, handmade on the premises and leavened for 24 to 48 hours. The dough is then hand-tossed to give it a delicately thin center.

Hand-pulled mozzarella is made throughout the day on site. This freshly-made cheese goes onto the pizza to be melted perfectly on each pie.

The wood-fired oven is kept at 900 degrees. Pizzas are cooked for a mere 90 seconds in the blistering heat.

The result of this labor of love is a flame-marked pizza with blackened blisters along the crust and bottom. However, the quick cook allows the pies to keep their soft and chewy texture. This is authentic Neapolitan pizza.
