One of the most beautiful things about Connecticut is the way each historic building is repurposed into something new and amazing. You will find the most beautiful seaside getaways located in former mansions and amazing restaurants inside former courthouses. One of the sweetest places to visit is the old Litchfield jailhouse. You’ll find shops, a tavern, and The Bakehouse, the cutest and most tantalizing jail cell you’ll ever see.
The oldest public building in Litchfield was built in 1812 with later additions built in 1846. The jail served as a prisoner of war facility during the War of 1812 and became a low-security jail. For a long time, it was considered a country club jail.
In the early 1990s, the jail was temporarily opened to all levels of prisoners until a violent escape ended with a guard getting stabbed and a New York man being held hostage.
In 1992, the jail was reestablished as a drug treatment center and later became known as the McAuliffe Manor until it permanently closed down in 2009.

The Bakehouse opened its doors in one of the former cells in May 2018 when professional bakers Jeremy McKendry and Allison Varian bought part of the renovated jailhouse space for their bakery.
The first thing you notice when you walk in is the smell of baking throughout the bakery. It's a guarantee that no other jail cell has ever smelled so delicious.
Throughout the day, freshly baked rolls, bread, cakes, muffins, brownies, and cookies are whipped up in this delicious and rustically charming bakery.
The daily menu can change depending on what's in stock, but it never disappoints. You will find breads ranging from garlic bread and many flavors of sourdough to brioche, focaccia, and challah bread (only on Fridays).
The bread isn't the only thing you'll love at The Bakehouse. Pick up cookies in flavors ranging from traditional chocolate chip and oatmeal raisin to marble, coconut, and red velvet.
You'll also be able to find a few gluten-free and dairy-free options.
