Founded in 1969, Pobre Pancho's was the brainchild of Frank and Mary Perez, who have stepped back in recent years (with their granddaughter currently managing the restaurant), but still assist in the restaurant's day-to-day.

Featuring some of Frank's mother's old recipes, Pobre Pancho's has earned a reputation around northern Colorado as one of the best Mexican restaurants in the region. That begins with their mouthwatering chili con carne and Menudo.

Like all great Mexican restaurants, Pobre Pancho's also serves an assortment of tacos, burritos, chile rellenos, tamales, and enchiladas, making it worth the trip from any corner of the state.
