Case in point: this Colorado restaurant way out in the countryside that serves food to die for.
Welcome to the southwestern Colorado town of Cortez, which is home to nearly 9,000 residents, the entrance to the iconic Mesa Verde National Park...
...and the unforgettable Pippo’s Cafe!
Pippo's opened in 1961 with just two tables and a counter, but has since grown into a beloved local hangout that has to be tasted to be believed.
While it has grown and changed over the years, the interior is still as laid back and welcoming as ever, and reminds us of childhood visits to grandma’s house!
