There are so many great restaurants in Denver’s RiNo neighborhood – I’m certainly making an effort to try them all. I love dining in this fun and happening part of town and so far, I’ve been impressed with almost every single place I’ve tried. One spot that’s especially worthwhile in this part of town is Dio Mio Handmade Pasta on Larimer. This counter-service restaurant focuses on fresh, handmade pasta, so if you’re looking for fresh pasta in Colorado, don’t miss this spot! Dio Mio first opened in 2016. Chefs Spencer White and Alex Figura both have fine dining backgrounds, and have brought their skills to this casual, unitimidating, and impressive counter-service eatery.
The restaurant recently closed for a month to renovate the space and update the menu, and it's even better than before! There's plenty of seating inside, and Dio Mio has a full bar, too.
In warmer weather, there's outdoor seating, too. This is a great place to dine if you want to enjoy some of the epic people-watching that RiNo is known for.
You may be too focused on the pasta to notice anything else, though. All of the pasta served at Dio Mio is made in house. It's fresh and it's beautiful.
The dishes created with these pastas are tasty, and they're also beautiful. Check out this Agnolotti with white bean filling, chorizo, pepperoncini, red wine braised fennel, and mustard frills, for one example.
Squid ink pasta is always striking due to its dark color. This Squid Ink Tortelli with shrimp mousse filling, mushroom pho broth, crispy leeks, and five-spice duck fat will blow your mind.
Do you like mushrooms? This Chanterelle Garganelli includes wild chanterelles, caramelized onions, prosciutto, preserved lemon, fried capers, aged balsamic and aged gouda. Wow!
If you're looking for something simple and straightforward, you'll like this Paprika Ravioli with sun dried tomato and kalamata filling, guajillo amatriciana, basil, and goat gouda. It may be simple, but it's elevated ravioli, and this is a dish you'll remember for sure.

Dio Mio Handmade Pasta is a Denver restaurant that you absolutely should not miss. If you love pasta, then you'll love everything served here. Even if you're just so-so on pasta, you're sure to leave extremely satisfied with whatever you choose to order.
