Chef Seidel is known for heading up the award-winning Fruition Restaurant and is the founder of Fruition Farms.

They also offer many preserved items like this homemade tomato sauce, pickled beets, or fig jam (just to name a few).

The restaurant side offers a dinner menu daily starting at 5 p.m. and has various seating options including this chef's counter which allows for the transparency that they aim to provide.
The restaurant focuses on seasonally-inspired dishes that take comfort food to an entirely new level.
With everything from small plates (including Roasted Bone Marrow and Market Provisions pictured above) to a family-style dinner that is sure to feed a crowd (try the 36 oz. Bone-In Creek Stone Ribeye), the menu is a palate-pleasing twist on some familiar favorites.
Make sure you pull up a seat to the bar which features an ever-changing menu of handcrafted cocktails that change with the flavors of each season.
In addition to the inventive cocktails, the Mercantile also offers draft and bottled beer (many from Colorado breweries), and an impressive wine list.
Mercantile's market opens every day at 7 a.m. and dinner is served from 5 p.m. until 10 p.m. from Sunday through Thursday and from 5 p.m. until 11 p.m. on Friday and Saturday nights.
