If you want to start a discussion as heated as the Trump-Clinton Presidential debates are going to be, just ask a Denver resident who serves the best green chile in town. Much like religion and politics, this is a subject that should only be breached if you are well versed on said topic and fully prepared to defend your position.
In my (humble) opinion, there’s really no right or wrong answer, because there are as many styles of green chile as there are restaurants that serve this precious commodity. It really just depends on what you’re after – thick or thin, mild or spicy, Hatch or other. That being said, Señor Burritos is an old-school Mile High haunt that ladles out some of the best green chile in Denver, with a straight forward smack of peppers and pork and a spice level appropriate for every palette.
Señor Burritos was slinging their glorious green chile on South Broadway long before the trendy SoBro nickname was born, and the once down-trodden neighborhood was considered cool. In fact, for nearly 20 years this family owned operation has been serving delicious eats to Mile Highers, and they now have three locations at 12 East 1st Avenue in Denver, 2553 Kipling Street in Lakewood, and 7195 Federal Boulevard in Westminster.
The first thing you'll notice about Señor Burritos' green chile is that it's actually more of a rusty orange hue than the usual greenish gold. The unique coloring is no doubt due to an undisclosed secret ingredient, which I could tell you, but then I'd have to...(well, you know the rest).
And while this thick, heavenly gravy-esque chile verde can certainly stand on its own and be slurped by the spoonful or used as a sauce for tortillas, most of us also prefer to smother everything in it. And I do mean EVERYTHING!
One of the most popular choices is undoubtedly a stuffed-to-the-gills burrito, sloshed with the delicately balanced green chile, smothered in rich melty cheese, and topped with a nice cooling dose of sour cream.
And the burrito possibilities are essentially endless. No matter what type of generously filled and smothered burrito you prefer, they've got it. Breakfast, veggie, carnitas, chicken, carne asada, chicharonnes, and more!
If you're a purist, you may choose to lay off the cheese so you can fully focus on the main event. (And, yes, the green chile is the main event; the burrito and other items are merely vehicles to transport the holy grail to your eager mouth.)
It really doesn't matter what you choose to slosh the meaty chile verde on - burritos, tacos, tamales, chile rellenos, fries, or any other house specialty - but whatever it is, just get it smothered! (And if you like it hot, might I suggest adding a bit of their spicy salsa to heat things up.)
You may even choose to traditional route of shoveling the peppery pork-filled creation in your mouth like the thick, smooth, hearty soup that it is, just make sure you do it at Señor Burritos.
