What is it about the familiar tastes of home that are so enticing? For award-winning chef, Hosea Rosenberg, it’s the authenticity and seasonal ingredients of his childhood home in Northern New Mexico that inspired him to open his newest restaurant in Boulder. Santo, a farm-to-table restaurant that’s menu is centered around a local favorite – chile, will give customers a taste of the Northern New Mexican region with a delicious modern twist.
The cuisine of his roots is a delicious blend of Spanish, Native American, and Mexican foods with a focus on the flavor of chile throughout a majority of the dishes. Rosenberg is excited to bring the “Real deal” to Coloradan’s who have a great affinity for the beloved chile.

From sauces, to salsas, to stews (and even popping up in the desserts) Santo's menu intertwines that distinct chile flavor throughout.

Your mouth will begin to water as you gaze at their menu which includes entrees like the Blue Corn Enchiladas and the Smashed Green Chlle Cheeseburger.
Try the Chocolate and Red Chile Cake (featuring dulce de leche, Mezcal strawberries, and sea salt caramel). Or, maybe the Apple and Green Chlle Pie with it's cheddar crust and served with vanilla ice cream is more your style.
Many are thrilled to know that most of Santo's ingredients are sourced from local Colorado farms.
The decor includes black and white photographs that celebrate New Mexico's cultural history and the large light fixture hanging over the bar area is in the shape of a large Zia sun, which is the symbol found on the flag of New Mexico.
You may be familiar with Chef Rosenberg (Owner and Executive Chef of Santo) who achieved culinary celebrity-status from his appearance and winning title on season 5 of Bravo Tv's Top Chef in 2009.
