Nothing satisfies quite like a great Mexican meal, especially when you hail from Colorado (as, let’s face it, green chile and smothered burritos are pretty much the Centennial State’s official foods). While making tacos, enchiladas, and – well – green chile and smothered burritos can easily be done from home, we happen to think they taste even better when they come from an authentic Mexican restaurant. As the longtime writer for Only in Colorado, I have had the pleasure of both visiting and writing about unique places around Colorado, many of which are locally-owned Mexican restaurants that serve some of the best food you will ever taste. While there are many of these downright delicious places, one stands out as even better than the rest, and I literally cannot stop thinking about it.
Before we begin, though, allow me to quickly introduce myself: I’m Annie, a lifelong Coloradan (yes, born AND raised – we do exist!) and writer for Only in Colorado. As a Colorado native, I have sampled some of the best and worst in Centennial State cuisine and feel confident in recommending this Mexican restaurant to both our loyal readers and friends and family!
Welcome to Limon: An Eastern Plains town that is home to several major highways and interstates, 2,000 residents, and arguably the best small-town Mexican restaurant I have ever tried.
Hiding away along the central commercial district, Jenny's Mexican Restaurant is a small, family-owned eatery that may seem unsuspecting on the outside but is anything but in terms of its cuisine.

When you first walk into Jenny's, you may be reminded of an old-time diner with its surprising chrome fixtures and black and white checkered floors (in case you didn't guess, the building did, in fact, used to house a 50s diner and ice cream shop), but once you get past your first impression and get a load of the menu, you will realize that you are in for something special.

While glancing at the menu, our kind and knowledgable server, Sam, brought to the table a few orders of homemade chips and salsa, which were arguably the best chips I have ever tasted.

After this, it will be hard to go back to the store-bought chips and salsa. You've been warned.
What is a great Mexican restaurant without a stellar drink menu? Despite it being a small-town restaurant, I was thoroughly pleased with Jenny's beer and cocktail selection, as they had an impressive array of beer, plus tropical cocktails a la margaritas, piña coladas, and daiquiris.

(Not so) fun fact: I learned the hard way that I cannot handle any amount of tequila, so I opted for a daiquiri. It was delicious (and pretty strong, hence this sad attempt at a picture)!
Now for the moment you have all been waiting for: the food! I don't know about you, but I almost always order the same thing from Mexican restaurants - huevos rancheros or chicken nachos. Since I have been to Jenny's in the past and ordered (and thoroughly enjoyed) both, I decided to try the Enchiladas Suizas, which did NOT disappoint.

As per the menu, Enchiladas Suizas are chicken enchiladas wrapped in a corn tortilla and topped with tomatillo sauce and mozzarella cheese. The entree was surprisingly sweet yet savory and had me wondering if these should be my new go-to order.
Since smothered burritos are a Colorado favorite, I figured I should take one for the team and try one. Jenny's offers giant burritos with nearly any filling you could want, so I chose the chicken burrito with rice, which came smothered in a homemade green chile.

It should go without saying, but this, too, was delicious and had me wondering if this should be my new go-to order. My head was beginning to spin from all the possibilities (or maybe it was just spinning from the daiquiri?)!
There were 10+ people in our party, and everyone ordered something different and had nothing but great things to say about their meals (including my 8-year-old and picky 5-year-old, which is saying something!). My mom got this half-order of beef nachos and was kind enough to let me have a few bites.

From the food and drink to cleanliness and service, it was an all-around enjoyable experience – one that I cannot wait to have again soon!
