It was a chilly, rainy spring day in West Virginia. My family and I were hungry for something sweet, but we had made the unfortunate discovery that many Mountain State ice cream shops were still closed for the winter (and, to be clear, I don’t blame them — of our family, only my husband opts for ice cream over hot chocolate even on the very coldest of winter days).
