For such a simple dish, a lot of techniques are needed to make it just right. The macaroni and cheese at Vintage Public House is definitely one to write home about. You won’t want to miss out on some of the best macaroni and cheese Northern California has to offer.
Those in-the-know understand a good mac-and-cheese starts with a roux. A roux for macaroni and cheese usually consists of butter and flour, but some cooks also use olive oil.
To really pack the dish with cheesy flavor, it’s best to use multiple cheeses.
The macaroni and cheese at Vintage Public House is one of the restaurant's most popular items.
With Cavatappi pasta, four cheeses, and a panko topping, it’s creamy and delicious. For a few extra bucks you can add jalapenos, bacon and/or pulled pork.
The restaurant is located inside Hotel Redding, in the downtown area. Open for lunch and dinner, the menu features rotating specials in addition to always available favorites. In the past they’ve served macaroni and cheese with toppings like beef short ribs, shrimp, and tortilla chips.
They’ve also had various takes on the classic dish, like Philly Cheesesteak macaroni and cheese, lobster macaroni and cheese, Guinness Macaroni and cheese and more!
Vintage Public House also serves signature cocktails, wine, and a rotating selection of craft beer. A party room is available for rent.
The room holds 15-30 people and you must make a minimum food and drink order to be able to rent it.
You’ll find street parking in front of the restaurant, but if that is not available there are two parking garages within walking distance.
Make it a date night and see a play at the Cascade Theater across the street.
They use a Cavatappi noodle to make their macaroni and cheese.
This is a hollow noodle that looks similar to an elbow noodle but has a slight twisty shape. This shape is great for picking up as much creamy cheese as possible in each bite.
