9 Reasons Why Green Chili Became Colorado's Most Beloved Food

If you are a Coloradoan who hasn’t been living under a rock the last 50 years, there is a good chance that you are familiar with the staple known as green chili…but what makes this dish so popular and iconic? Well, for starters:
1. Green chili tastes great by itself...
A bowl of green chili + crushed tortilla chips + a dollop of sour cream = pure heaven.
2. ...or as an accompaniment.
Burritos, hot dogs, cereal, milkshakes... it's all good!
3. It is easy to customize.
Is it just me or does it seem like every green chili recipe is different from the last? Isn't it wonderful?! (But for the record, my mom has the best recipe of them all.)
4. It has the perfect amount of spice to it.
Granted some recipes are going to be a little hotter than others, but if there is no additional spice added to the recipe, the chilies are typically pretty tame and give your taste buds the perfect kick.
5. It keeps you warm on a cold...
6. ...or hot day.
Come on, we aren't going to stop eating it just because it's summer!
7. Most of Colorado's green chili recipes consist of Pueblo-grown chilies...
8. ...and locally raised pork.
Therefore, when you make (or eat) a batch of green chili, you are supporting local farmers.
9. Finally (and most importantly), it just tastes GOOD.
